Ambiente, a Landscape Hotel, is designed to elevate and inspire all the senses. Guests are immersed in the extraordinary environment of Sedona not only through breathtaking views and the soothing sound of an ancient waterway, but with a multi-sensory culinary experience at the signature Restaurant Forty1. Among the best restaurants in Sedona, Restaurant Forty1 offers a dining experience inspired by the surrounding landscape. Executive Chef and Arizona native Brianna Barker brings the state’s flavors to the table through seasonal menus, artful presentations and a local-first cooking philosophy.

Born and raised in the Verde Valley, Chef Barker started on her culinary path at a young age. Helping out at her grandparents’ bakery in Cottonwood inspired a love for cooking and an appreciation for food as both a creative art and a way of bringing people together.  Over time, she mastered her craft by working at fine dining and farm-to-table establishments throughout the region. Along the way she got to know farmers, producers, and the many culinary traditions that give Northern Arizona its distinctive flavor.

Now leading the culinary team at Restaurant Forty1, Chef Barker delights in showcasing the flavorful abundance of the state she knows so well. Her seasonal menus reflect the high desert terroir, giving guests a gustatory experience of the landscape in every bite.

From Local Farms to Restaurant Forty1

Supporting local farmers, ranchers, growers, and foragers is at the heart of Restaurant Forty1’s philosophy. Chef Barker has nurtured relationships with many of these culinary artisans during her years spent cooking in the Verde Valley.

One of her longest-running collaborations is with Cottonwood-based grower Eric Kostecki of Sweet Greens Arizona, with whom she’s worked for more than a decade. “I’m lucky to have him open to growing any micro-green I ask for, when the season allows,” says Chef Barker.

Another valued partner is K4 Ranch in Prescott, who supplies the beef and bone marrow for one of Chef Barker’s favorite appetizers on the dinner menu, The Copper State. Named for Arizona’s rich mining history, it features a classic beef tartare made with roasted bone marrow. She adds caper berries for texture and creme fraiche for creaminess, finishing it with a rich confit of egg yolk, sided with stoneground mustard and seeded sourdough toast. It’s a delicious example of how she highlights a local product and puts her own spin on a classic dish. K4 Ranch also supplies the tender cuts of filet mignon on the dinner menu, which is served with a velvety black garlic demi-glace.

Her network continues to expand as she meets producers at the local farmers markets and, when time permits, visits the farms with her culinary team. These relationships form the backbone on which she builds the local-first menus for Restaurant Forty1.

The Art of Creating a Seasonal Arizona Menu

It begins with a creative conversation about what’s local and in season.

“I like to choose my ingredients first, seeing what will be in season the longest, and then we build from there,” says Chef Barker. “My culinary team and I are always talking and playing with new menu ideas.”

With two talented chefs who are also Arizona natives, Chef Barker and her team have built an established network of growers, one farm at a time. They have a solid understanding of the region’s growing seasons. While Sedona does experience seasonal changes, it is not a four-season climate. Thus they focus on two major menu changes each year with ongoing variations introduced as new crops are harvested. This flexible approach ensures seasonal produce can be included on menus at the peak of freshness.

For Chef Barker, Arizona’s fresh, local ingredients are the star of each dish and need little embellishment. For example, she will grill local grapes and fold them into a savory sauce, or add corn to a dessert.

“My cooking style is clean and uncomplicated. I don’t like to mask the natural flavors of ingredients with heavy sauces or seasonings,” she says. “I want the food to speak for itself. But we also eat with our eyes first, so presentation is just as important to me. I want every plate to be a work of art.”

While the meat and seafood items on the menu are largely constant, with a few variations, the produce is seasonal. For the winter, diners can expect heartier root vegetables, mushrooms from local foragers, and delicate figs and cherries.

“We try to follow the five Cs of Arizona: copper, cattle, cotton, climate and citrus,” says Chef Barker. “So it’s safe to say you will always see citrus on our menus.”

Restaurant Forty1’s culinary program is growing alongside the local farms. Chef Barker looks forward to working with more Arizona producers as they expand, offering more produce to keep up with demand. It’s a mutually beneficial relationship that introduces diners to the region’s bounty while supporting local agriculture.

Today she creates menus celebrating their locally-grown ingredients, offering diners a deeper sense of place. The result is more than an exceptional meal.
